On the Tuesday, Nov. 21 episode of the “Today” morning show on NBC, Peter Callahan ’81 shared a few of his favorite cake recipes from his most recent book, Peter Callahan’s Party Food.
Callahan, who has been a caterer for more than 30 years as principal and creative director of Peter Callahan Catering, is widely credited with creating the mini-food trend. His newest book, subtitled Mini Hors d’oeuvres, Family-Style Settings, Plated Dishes, Buffet Spreads, Bar Cart, was published this fall and includes whimsical hors d’oeuvres recipes, serving ideas and stories from Callahan’s career.
The book also includes four cake recipes featured on his “Today” appearance: a creamy cheesecake, a red velvet cake with cream cheese frosting, a rich chocolate cake with salted caramel buttercream, and his homemade take on a colorful Funfetti cake.
The author of the 2011 book Bite By Bite: 100 Stylish Plates You Can Make for Any Party (which includes an introduction by Martha Stewart), Callahan is a regular guest on “Today” and has been featured in other prominent media outlets like MTV, the Food Network, Martha Stewart Living, O Magazine and many others.
Callahan worked on Wall Street in trade and finance before founding Callahan Catering in 1985. As a student at HWS, he was a member of Theta Delta Chi and played squash.
