31 March 2025 Explore Kitchen Chemistry at the Edible Science Fair April 5

Faculty and students from the HWS Chemistry Department will host the annual Edible Science Fair, a fun, interactive and family friendly event.

The annual Edible Science Fair returns on Saturday, April 5, from 11:30 a.m. to 1:30 p.m. at the Geneva Public Library. Hosted by HWS Professor of Chemistry Justin Miller and his students, the event is free and open to the public.

At this year's event, HWS students will lead interactive stations demonstrating chemical principles through food, covering topics such as crystallization (liquid nitrogen ice cream), coagulation (including crème brûlée) and dispersions (Jello, boba tea and more). Attendees will have the chance to learn, experiment and taste how chemistry shapes what we eat.

The Fair is an extension of Miller’s upper-level chemistry course, “Bonding with Food,” in which students conduct food-based experiments and explore food production and policy. Previously held on campus, the event has moved to the Geneva Public Library to engage more members of the Geneva and Finger Lakes communities.
